Charcoal Grill Secrets: How to Use an Offset Smoker?
Why Would I Want to Smoke my Meat? Smoking meat on a charcoal grill goes beyond the taste, it’s an art form. Not only will smoking your meats give you a nostalgic feeling, there is a definitely a sort of alchemy that can’t be achieved with any other type of cooking. It’s nostalgic because mankind has been cooking meat over a fire for the last 1.8 million years. Today, we have perfected the art of preparing the most delicious beef short ribs or the flavorful pork shoulder using the most simply of grills. Now it’s your turn! In this guide, we’re going to walk you through how to use an offset smoker to prepare the best-smoked meals with a basic charcoal grill setup. Pros and Cons of using an Offset Smoker Charcoal Grill Pros You can stoke the fire or add wood chips, chunks, logs, or wood pellets without opening the cooking chamber. Unlike smaller top-lid grills, offset smoker grills are typically designed like a barrel. Which means you are able to smoke larger quantities of food. There are no electrical or moving parts that you have to worry about replacing. Easily change the smokey flavor by adding different wood chips (ie: apple, cherry, hickory, and oak) Cons Some of your more heavy duty offset smoker charcoal grills can be pretty hefty. If you are considering getting a bigger grill, that weighs hundreds of pounds, get ready to purchase a grill trailer to help you maneuver your new backyard beast. Unlike other grills, building a steady fire requires patience. Some offset smoker grills require 1 – 2 hours to maintain a solid temperature that you’ll need to complete a successful cook. However, after you learn how to smoke your meats properly, it will be well worth the wait! What are the Steps to Smoke? Step 1: Prepare your chimney starter. I typically only fill my chimney about halfway before I light it. After you light your charcoal, wait until your briquettes have white corners to signify that they are at the appropriate temperature. By preheating your coals, you will prevent bitter creosote (ash/soot) from forming on your meat. Step 2: Make sure that both exhaust hatches are open. If you attempt to start your charcoal grill with the each exhaust closed, you won’t only keep your grill from rising to the proper temp, but you will end up choking out your flame. Step 3: Carefully pour in the hot briquettes into your offset smoker box of your charcoal grill. Step 4: Our friends at AmazingRibs.com said it best, “cook with charcoal, not wood.” Unlike using other types of grills, you don’t need to soak your wood chips or chunks when you’re using an offset charcoal grill. Even though soaked wood absorbs a small percentage of its weight in water, adding wet wood will only serve to cool your coals. Thus, causing fluctuating temperatures to happen. Step 5: You’ll notice that you’re going to start seeing and smelling the smoke from your wood. Feel proud that you made it this far! At this stage, you’re going to want to keep an eye on the temperature. Depending on what you’re cooking, you’ll want the grill to climb to about 225 – 250 degrees Fahrenheit. Most grills will have a temperture gauge on them, like the one below. Step 6: Bring on the meat! Add your cuts directly on the proper grates of your grill. Step 7: Be ready to rotate throughout your cook. A quick lesson about fire. Since your heat source is located on one side and not directly underneath your meat, it’s only logical that the meat located furthest from the offset smoker box will not cook as fast as the meat located closest to the offset smoker box. Make sense? Good! Your PyroAnalytics lesson is over. Now keep rotating your meat, from left-to-right every so often so that it can cook evenly. Step 8: Adjust the temperature if necessary by using the ventilation doors. This is where it moves from more of a Science into an Art. Be patient and watch how well your meat cooks. Close or open as many doors as you need to learn what your grill requires to pull off the most successful cook. Step 9: Be careful not to over smoke your meat. Instead, start by only adding a few wood chips at the beginning of your cook. If you notice that you’re losing out on that beautiful vapor, try adding in 3 – 5 new wood chips every 30 minutes to get you that desired flavor that you’re looking for. Step 10: Enjoy your tasty rewards! Use a meat thermometer to make sure that your meat has cooked all the way through. However, once you’re done cooking go and enjoy some mouth watering home-cooked BBQ! -

I know everyone goes crazy for pumpkin flavored fall treats, but I’m here to tell you the good news; there are other delicious fall flavors to enjoy, too. I’m here today to preach the Gospel of Maple. Last Friday, I stopped by Trader Joe’s on my way home from work to pick up potatoes for my favorite beef and vegetable stew. I use my mother’s recipe, which she got from her mother. It’s good old fashioned American home cooking (read: lots of salt and butter). While I was there, I perused their bakery selection, as one does on a chilly fall afternoon. And there, nestled between the sea salt brownies and the coffee cake, I found it- the Maple Streusel loaf. I’ve always loved maple- some may say that I moved to Portland just for the Maple Bacon Bar from Voodoo Donut. Naturally, I had to try this loaf. Long story short, the loaf had disappeared by Sunday morning and I was fully converted into the cult of Maple. The fabled Maple Streusel Loaf The takeaway is this- Maple is delicious and a perfectly valid fall flavor. Even if you’re a pumpkin devotee, you may find that there’s room in your life for both. Our Favorite Hearty Fall Recipes Unexpected Pumpkin There’s a good reason that pumpkin is so popular in fall baking- it’s the quintessential fall food. We visit pumpkin patches, carve pumpkins into jack-o-lanterns for Halloween, or decorate our whole houses in pumpkin motifs. Starbucks has ingrained the PSL into our collective consciousness. Pumpkins are big and orange just like the fall harvest moon (symbolism!). Versatile in flavor, pumpkins can be used in both sweet and savory dishes. Easter Bunny Blues: How to Care for Your New Pets
Your kids talked you into buying them baby chicks or bunnies for Easter: Now What? Chicks and bunnies are synonymous with the Easter holiday. Those cute little baby animals are worldwide symbols of fertility and new life that appears with Spring. Easter falls on Sunday, April 21st this year. Just in time for farm and pet stores to stock their bins with baby bunnies and chicks. Prepare for your new pets Giving chicks and bunnies as Easter presents is a long-standing tradition, but not a very good one. This tradition dates back to a time when these animals would be raised on the farm as livestock. Suburban and urban rabbits and chickens are usually considered pets these days. This means they require a higher level of care and have longer life spans. Generally, it’s a good rule to NOT give live animals as gifts. Fortunately, this trend has died off somewhat in recent years. The sad truth is that thousands of bunnies and chicks are given as Easter gifts every year, only to find themselves dumped at the shelter (or worse) when they are no longer cute fluffy babies and the kids get bored with them. Don’t purchase a live animal as an Easter gift unless you are prepared to care for that animal for the duration of its life. Ready to have a “Hoppy” Easter? Bringing home any sort of pet is a big commitment, one that requires research and planning. Chickens and rabbits are both social animals. They thrive and are happiest when they have at least one friend. There are benefits to keeping backyard chickens, namely those delicious free range eggs (they also eat bugs like it’s their job). Bunnies can make great pets for children and adults. They are cuddly and fun when properly socialized. Rabbits can be taught a variety of tricks, including how to use a litter box. Both animals require specialized housing and regular care. If you’ve been thinking about adding a furry or feathered friend to your family, Easter can be a great time to do it. Spring is when these animals are most readily available in farm and pet stores. Keep reading to make sure you are prepared for the commitment of your new pets and family members. Welcoming your new pets into the home Chickens and bunnies are not too difficult to care for, but they do require care. They need safe, secure habitats, appropriate food and bedding, and enrichment to keep them busy and happy. If you just can’t resist those cute little balls of fluff, make sure you’re prepared for the commitment of caring for them. Caring for Chickens Chickens can make great additions to any home, and in many places, are even legal to keep within city limits (although roosters generally are not allowed). Your chickens will need a chicken coop to lay their eggs and to keep them safe from predators. Chickens can be let out during the day to roam your backyard. They will eat tons of bugs, seeds, and anything else they can find. Many chickens will naturally return to their coop at night to roost, although you may need to teach them to do so at first. Always be sure to lock the coop at night to prevent predators from breaking in. Creature Comforts Most chickens begin laying eggs at around 6 months of age, and will lay an average of 5 eggs a week. A chicken coop with a designated nesting box will provide your chickens with a secure place to lay their eggs. This gives you an easy and consistent place to collect those eggs from. Most nesting boxes are easily accessible with a hinged roof for easy egg collection. You will want to check the nesting box daily for eggs. Line the nesting boxes with straw or other soft material to encourage your chickens to nest and lay inside the box. Learn more about setting up your nesting boxes here. Your chickens will need access to dry dirt or sand for dust baths, fresh drinking water, and a steady food supply. While your chickens will find plenty of things to eat in your garden, you will want to supplement their diet. Chickens can eat kitchen scraps such as fruits and vegetables; cooked beans, pasta, and rice; bread, nuts and seeds. You can also purchase poultry pellets to feed your chickens, which is essentially chicken kibble and will provide them with the balanced nutrients they need. You will also need to clean the chicken coop regularly. Chickens are relatively indiscriminate when it comes to relieving themselves; in other words, they will poop in the coop! Fortunately, many of our coops come with a slide out tray that will collect droppings and can be easily pulled out and hosed down. Be sure to change the straw and bedding once a week. Choosing the right breed of bunny for your family is important. Some of the most popular breeds include the Lionhead, the Flemish Giant, and the Holland Lop. Rabbits require a rabbit hutch enclosure, whether they live inside the house, garage, or in the backyard. The hutch should be large enough for your bunny to comfortably stand up and move around. Rabbits need fresh hay and bedding inside their hutch. You will need to clean the hutch regularly, at least once a week. Most of our hutches feature slide-out trays to make daily clean up easier. Your bunny will need access to fresh water and food every day. You can purchase rabbit pellets at your local feed and farm supply store. You can also offer you bunny fresh green vegetables as a snack or treat. Have fun with your bun Rabbits also need socialization and enrichment. If you get your bunny from a home pet rabbit breeder, the babies will already be socialized with humans. To grow your bond with your pet bunny, make sure to interact with him every day. Bunnies are very social animals and love to cuddle. Sitting on the floor and letting your rabbit approach you for playtime and snuggles is the best way to interact with him. Rabbits are ground dwelling, burrowing animals that do not like to be picked up and carried around, as being high up is very uncomfortable for them. Growing up in Oregon, I have been on many a camping trip in my time. There are all different ways to camp; backpacking into the wilderness, car camping on the coast, party camping at festivals, backyard camping, tent camping, yurt or RV glamping- you name it, I’ve probably done it. One of my favorite things about camping is how open ended it is as an activity; no matter your skill level or preferred style, anyone can have fun on a weekend camping trip. My two favorite camping trips are prime examples of this: The first was a two-night camping party extravaganza outside Portland with a huge group of friends for Warped Tour 2007. It was hot, it was loud, it was crazy. There was beer pong, campfire singalongs, and my best friend karate chopped a burning log and then fell in the creek. We slept in our cars and ate McDonald’s for every meal. The second was vastly different: a three-day backpacking trip into the Lower Rogue Wilderness Area in Southern Oregon with my then-boyfriend. We packed it in and packed it out, spending our days hiking with 40 lb packs on our backs and our nights laying out under the stars, listening to owls in the trees and the sound of the river below us. There is a whole spectrum of camping between these two extremes! Whether you’re backpacking, car or tent camping, or glamping, you need to make sure you bring all the essentials. Make note of the closest ranger station, general store, or other outpost of civilization, especially if you are heading into the backcountry. Plan meals and pack accordingly. Bring a spatula and skillet if you’re making pancakes for breakfast. Pre-season meat at home or bring it in a marinade bag. Don’t forget salt and pepper! Be aware of fire season, fire hazards, and check ahead of time whether campfires will be allowed in your area. If not, you’ll want to bring a portable charcoal grill or propane camp stove. Don’t forget the coffee! You probably won’t be bringing your Keurig, so opt for iced coffees or instant coffee. Bring a pot to boil water in.
